Meat and meat products must pass high quality requirements before entering trade. Different methods are used to check quality from the first meat inspection to the last. Particular attention is paid to the nature of the flesh before the carcasses are released for further processing. The rules for this are outlined in Regulation (EC) No 2073/2005 under microbiological criteria for foodstuffs. In the event that the carcasses will be stored, more detailed studies must be performed to determine if the meat is microbiologically safe. These microbiological studies may test for Salmonella, Listeria monocytogenes and Campylobacter.

The foodproof Salmonella Detection Kit detects over 700 different strains of Salmonella in less than 24 hours (including pre-enrichment and manual or automated sample preparation) with clear, reliable results.

The foodproof Listeria Genus Detection Kit detects all Listeria species. The recommended sample preparation system is the foodproof Short Prep Kit II, which we recommend for Gram-positive bacteria. This sample preparation kit is easy to use and has been tested and certified to meet the stringent requirements of both AOAC and NordVal.

Of particular relevance to the poultry industry, studies have found Campylobacter to be present in up to 76% of chicken meat products tested. In fact, 2005 was the first year the number of reported Campylobacter infections surpassed the number of Salmonella infections.

To test for Campylobacter in meat, we have created the foodproof Campylobacter Detection Kit (for LightCycler® PCR instruments). It reliably determines the presence of Campylobacter species C. jejuni, C. coli, C. lari, C. upsaliensis, C. hyointestinalis and C. fetus. This kit also allows for the identification of C. coli, C. jejuni and C. fetus using melting curves.

The foodproof Campylobacter Quantification Kit (for TaqMan®-based PCR instruments) can be used for rapid and reliable quantitative results of both C. jejuni and C. coli without pre-enrichment.
